Cambio is on a mission to create a higher standard in premium tequila by exploring small quality changes throughout the spirit's creation. We call this new interpretation "Método Refinado." It’s an innovative, 10-point process where we approach every step thoughtfully, looking for opportunities to make subtle changes and transform our spirit into a work of art, while also honoring the heritage and traditions of tequila producers. From our slow fermentation and distillation to our unique and unprecedented barrel finishing, we find meaningful changes in every step.

Our estate only Agave is hand selected and comes directly from farms in the high elevation Highlands of Jalisco.

2. The piñas are then cooked using a “slow and low” technique. This gentle cooking brings forth maximum quality and flavor.

Piñas are placed whole in stone ovens, and we try not to cut them into pieces which, while faster, releases aromas and flavor too early in the process.

After cooking, a traditional tahona wheel is used to gently squeeze the agave juice from the plant by hand instead of a roller machine or diffuser processing.

We use local deep-well water filtered by the volcanic soils surrounding the area during our process.

During fermentation, we use extremely low temperatures and yeast more commonly used in wine than tequila, which brings out greater floral and aromatic agave notes. This yeast takes longer to ferment but results in a more flavorful spirit with greater texture and complexity.

Cambio is distilled to an uncommonly low proof - below 50% ABV. This results in an elegant and aromatic Tequila with incomparable full body and flavor.

Every drop we produce is rested in specially selected barrels, resulting in a rounder, softer spirit and added complexity.

We use over 13 premium, unexpected barrel types to soften and add unprecedented complexity and nuance to all our products.

We follow sustainable practices in production and packaging. The label is made from artisan “amate,” an ancient method of creating nonwoven fabric using the barks of indigenous trees that dates back to the Mayas and the Aztecs.
