The Cambio Cellar Reserve Series offers tequila fans a taste of our relentless pioneering spirit. No other tequila is as dedicated as Cambio in bringing bold and thoughtful barrel finishing to the spirit. Founder John des Rosiers brings his chef and sommelier training to the table for every rare release, exploring the subtleties and nuance that barrel finishing can bring to our tequilas.
We are constantly experimenting with the science of barrel aging, and we invite you to taste along with every step of our journey. Each Cellar Reserve release will be a unique, one-of-kind offering, and due to the genuinely small-batch nature of each offering, quantities are extremely limited.
This particular batch of Blanco from our 2023 release was made at extremely high sugar levels with extraordinary agave to start fermentation—more than double the level other distilleries work at. It was also fermented at incredibly low temperatures, roughly 1/3 the temperature of traditional tequilas. Next, we distilled the tequila and only captured the rarest part— the heart, discarding all the “heads and tails” that would normally be included in the batch. This tequila exemplifies the very essence of what our unique process can achieve, and we can’t wait to pour our heart into your glass.

For our second rare and extremely limited release, we’ve utilized a very special finishing barrel from one of America’s most amazing rye whiskey distillers that also dabbles in gin. Starting with a base of our Blanco Tequila, we finish the spirit in rye whiskey barrels that have also been used to age gin, resulting in a wonderful bouquet of botanicals balanced by bold rye spice. This intriguing release is bottled at cask strength with no dilution, and will be released as a series, the first being aged for 4 months, then eight months, then twelve.
